【English Translation】

When spring comes, the days get warmer and many flowers begin to bloom. You can feel the arrival of spring not only through nature, but also through food.

In Japan, the foods that taste the best in a particular season are called “shun” (旬). Seasonal foods are fresh and very delicious.

In spring, there are many seasonal foods. For example, wild mountain vegetables (sansai). Bamboo shoots, warabi ferns, and fuki are vegetables that make people think of spring.

Every year, I go digging for bamboo shoots with my grandmother. Around this time of year, they also appear in supermarkets. Many people cook bamboo shoot rice (takenoko gohan) or rice with mountain vegetables.

Also, nanohana (rapeseed blossoms) and spring cabbage are in season. Nanohana is a little bitter, but it has a very spring-like taste.

Tsukushi (horsetail shoots) are another food that reminds people of spring. They actually grow like weeds around here, but if you stir-fry them, they are very tasty. Around this time of year, if you see someone carrying a bag and searching along roads or riverbanks, they are probably picking tsukushi. I also like collecting tsukushi.

Spring is also a great season for shellfish. Asari clams and hamaguri clams are in season, and people often make them into miso soup or steam them with sake. I personally do not eat seafood because I am not a big fan of it, but I still go clam digging (shiohigari) every year. I simply enjoy collecting things.

Many spring flavors in Japan might be quite unique to the country. Eating seasonal foods is a great way to enjoy the changing seasons. It is a very Japanese way of appreciating the time of year.
